It is decidedly smooth and alluring, with the classic aromatic notes of Prosecco from the hills, which benefit from a special microclimate where greater temperature variations and limestone soils lend it a distinct "Superiore" finesse. Notes of freshly ripened fruit stand out, particularly apple and pear. On tasting, too, the typical notes of the grape variety are evident, along with a residual sweetness that is never cloying.

This original Cuvée is the result of the first pressing of 30 years old parcel Chardonnay called Les Mulottes, which the Family Michel was lucky enough to acquire in the 90s.
The nose immediately perceives elegant notes of brioche, combined with classic citrus notes with intriguing hints of white flowers and honey. The taste is a mixture of an important raw material and an unique territory.

Some of the fundamental elements that help us achieve a valuable Asolo Prosecco are: the grapes, exclusively sourced from our vineyards, produced using extremely sustainable methods respectful of biodiversity. Exclusive use of indigenous yeasts, the result of our selections, ensuring the utmost expression of our hills. Low fermentation temperatures and very long fermentations. This ASOLO PROSECCO DOCG FRIZZANTE BRUT, a clear and faithful expression of the Asolo DOCG terroir, stands out distinctly from those produced in other areas, above all thanks to its remarkable flavour profile. Indeed, the Montello region (a hilly area north of Venice), which falls within the Asolo appellation, exhibits remarkable richness and a distinctive savouriness, which come to the fore in the Brut version and find their finest expression. The aromas are classic, featuring fresh, citrusy notes, white flowers and distinct hints of sage and fragrant herbs. It offers great concentration and body on the palate, with an unexpected finish and lingering aftertaste.

A distinctive feature of this Cuvée is the very long stay on the lees. This Champagne always comes out at least 8-10 years after the harvest.

TASSO is our only Glera vineyard planted in a ritocchino layout (North-South), and thanks to this particular exposure, it develops a structure and aromatic profile that are not easily found in other vineyards in our area. This small selection comes from a plot of just 0,97 hectares planted in 1980 on the Montello hill (50 km north of Venice), within the Prosecco Superiore area. The sparkling process is carried out using an extended Martinotti Method, with at least 180 days in the pressurized tank (autoclave), and always employing our indigenous yeasts, which allow for an extraordinary connection between the wine and its terroir.

The CUVÉE INDIGENA derives from a selection of the best grapes from the old “Vigna Monti”, a plot dating back to 1975, situated on the Montello hillside (in the north of Venice) in the historic Prosecco Superiore area. Apart from the characteristics of the grapes used, which stem from old Prosecco clones, another feature of this Cuvée is the natural wine-making method used. Soon after a light pressing, the must is placed in a very low temperature autoclave to initiate a very, very slow fermentation process. Thereby only indigenous yeast are used and there is no addition of sugars. This slow, low-temperature fermentation lasts over 10 months and it creates an extremely fine and elegant perlage, endowing this spumante with its extraordinary creaminess. When united with the natural complexity of Asolo Prosecco, a unique and unmistakable character sets this spumante apart from other kinds. Created by direct fermentation of the must using indigenous yeasts, this spumante will enable you to rediscover the true original feeling of the Prosecco variety.
