The distillation is done slow and controlled using the ancient system of copper boilers for steam, as the best tradition of Veneto region. The Grappa di Monovitigno Moscato is made with pure grape marc from the Moscato grapes Piemontese: these are collected in sealed plastic bins, fermented at controlled temperature, and immediately sent for distillation. In the production of Grappa di Monovitigno Prosecco, to best reflect the characteristics of the grape, the skins are collected in sealed plastic boxes and immediately sent for distillation. In this way you avoid contamination with other varieties derived from grape pomace.
