Produced from the appassimento (drying process) of three native grape varieties: Glera, Verdiso, and Boschera.

The production of Torchiato di Fregona follows an ancient method. According to the official production regulations, no chemical additives are allowed — everything is done by harnessing the seasons, the unique microclimate of the Fregona area, and the winemaker’s experience.

Legend has it that in the 1600s, a winemaker was forced to harvest grapes before they were fully ripe due to an early frost. He laid the grapes on racks in his attic. The following spring, he was surprised to find the grapes had become incredibly sweet, yet hardened from the drying process. He decided to press them several times and left the resulting must to rest in small barrels, without much expectation. A year later, the first tasting lit up the farmer’s face — he realized he had discovered an extraordinary wine. Thus, Torchiato di Fregona was born.

In fact, this Champagne always comes out at least 8-10 years after the harvest.

A parcel champagne that fully reflects its land. Aged in oak barrels, without malolactic fermentation for 7 months, this wine is clear, sparkling, with light coppery blonde reflections. A fine foam brings a final touch of lightness. The aroma is very delicate, with notes of sweet flowers, hazelnuts, ginger and a fruity touch of fresh apricot and grapefruit peel. A few notes of fresh butter are felt when the wine heats up. The attack in the mouth is energetic and striking. The absence of liquor gives continuity to the wine.
